This red wine is from Umbria, Italy. This wine is made with hand-picked grapes. It undergoes a spontaneous fermentation followed by 15 days of maceration. Malolactic fermentation occurs in steel tanks, and the wine ages on fine lees for around three months in stainless steel. Tenute Baldo protect white grape musts and macerates with dry ice and favor flavors with low fermentation temperatures and cleaning of grape musts. The winery's wines are the result of a joint work between vineyard and cellar, between land and man, between agronomist and winemaker. Some reviewers have described the wine as having aromas and flavors of red cherry, raspberry, strawberry, wildflower, thyme, cracked pepper, red currant, morello cherry and violet flower, with silky tannins and zippy acidity.
